Dundee cake

Dundee cake is a classic fruit cake from the Scottish city of Dundee. There is a widespread story around this recipe that Mary Queen of Scot did not like glazed cherries in her cakes back in the 1700s. So her bakers decided to substitute it with blanched almonds, and so Dundee cake was developed.

The sweet and bitter tastes of orange, as well as the gorgeous arrangement of almonds on top of the cake, set it apart from other fruit cakes.

Try this delectable cake recipe this Christmas and enjoy with your friends and family.

Ingredients:

  • All Purpose Flour- 1 cup

  • Baking Powder- 1/2 tsp

  • Salt- 1/8 tsp

  • Grounded Almonds- 1/4 cup

  • Butter- 5 tbsp (soften)

  • Brown Sugar- 5 tbsp

  • Egg- 2

  • Orange Marmalade- 2-3 tbsp

  • Raisins- 1/4 cup

  • Golden Raisins- 1/8 cup

  • Cherry- 1/4 cup (chopped)

  • Black tea- 100 gm

  • Orange Zest- 1 tsp

  • Orange Juice- 1/8 cup

  • Blanched Almonds- 50 gm

  • Milk- 1 tbsp

For glaze

  • Milk- 1 tbsp

  • Sugar- 2 tsp

Method:

  • Preheat the oven at 180 degree centigrade. Grease and dust the 6 inch cake tin and line with the parchment paper.

  • Sieve the all purpose flour, baking powder and salt. Now add the grounded almonds to the sieved ingredients. Mix well and keep aside.

  • Then in another bowl, Beat butter and brown sugar till light, creamy and fluffy. Add eggs gradually (one egg at a time). Beat well.

  • Add orange zest, orange marmalade and orange juice. Mix well. Stir in little flour(1 tbsp flour at a time) gradually to stop cuddling. Now add the remaining flour and combine well with spatula.

  • Add milk. Mix well

  • Now add the soaked Raisins( soaked in the black tea for 1-2 hours and strained) and cherry. Mix well

  • Transfer the batter into the prepared tin. Level the batter using spoon. Now arrange the blanched almonds in same order as shown in the video.

  • Then bake for 45 min at 180 degree centigrade . After 45 min lower the temperature and bake again for 20- 25 min at 160 degree centigrade till skewer comes clean.

  • Meanwhile prepare the glaze. Heat the milk and sugar till the sugar completely dissolves.

  • Brush the glaze on the top of baked cake. Then bake for another 3 min at 160 degree centigrade

  • Once the cake is ready. Keep aside to cool before serving.
